The smoke point is the critical temperature at which an oil begins to burn, break down, and release visible bluish smoke. This indicator is the main guideline when choosing a fat for high-temperature cooking. When oil reaches its smoke point, irreversible chemical changes occur within it, beneficial nutrients are destroyed, and dangerous compounds begin to actively form.

During overheating, oils break down into glycerin and fatty acids, which upon further heating turn into acrolein and other toxic aldehydes. Acrolein has a pungent odor, irritates the mucous membranes of the eyes and respiratory tract, and is a potential carcinogen when regularly ingested into the body. This is why using oils with a low smoke point for frying causes serious harm to health.

The smoke point depends directly on the degree of oil purification and the predominant type of fatty acids.

Saturated fats have the highest stability and a high smoke point.
Monounsaturated fats have moderate thermal stability.
Polyunsaturated fats are the least stable and begin to burn at minimal heating.

Refined oils always have a higher smoke point compared to unrefined counterparts from the same raw material, as they lack organic impurities that tend to burn first. Always consider the cooking method and choose an oil with an appropriate smoke point to ensure your food is not only delicious but also safe.
