Which cooking oil is best?
The choice of the right vegetable oil for frying depends on the cooking temperature and the chemical composition of the product, particularly the smoke point. Refined olive oil is considered a versatile option for most culinary tasks due to its stability when heated and its neutral taste. Avocado oil has a very high smoke point, making it an ideal choice for intensive thermal processing, such as searing meat or poultry over high heat.
Coconut oil is also great for high temperatures due to the predominance of saturated fatty acids in its composition, which oxidize more slowly when heated. On the other hand, unrefined olive oil is strictly not recommended for frying, as it begins to burn at relatively low temperatures, loses its beneficial properties, and acquires an unpleasant bitter taste.
