How to tell if the oil is hot enough?

Visually: oil flows like water, slightly smokes (overheating — smoke and smell). Test: drop a drop of water or a piece of the product — it should actively sizzle. Wooden spoon: bubbles around the tip. Thermometer: 180-200°C for frying. Cold oil = the product will absorb the oil and not brown.
